I bet you never thought to freeze cabbage!
Cabbage is a great vegetable to include in your diet as it contains more anti-cancer compounds than any other food!
I like to use it in soups through the Winter, so freezing it comes in handy.
My friend Beth gave me the biggest cabbage I had ever seen a couple of days ago.
I am so thankful to have so much of it in the freezer for later use.
To freeze:
Wash and discard outer leaves.
Cut into wedges or shred in thin cuts.

Blanch wedges for 3 minutes.
If you shred the cabbage, blanch for 1 1/2 minutes.
If you shred the cabbage, blanch for 1 1/2 minutes.
Cool and drain....I always lay the cabbage out on a clean dish towel on the counter.
When cabbage is fairly dry, pack into quart freezer bags, seal and freeze.

Freeze cabbage?! This sounds really easy and would make a great addition to Winter Soup. Do you know if it thaws well enough to add to a stir fry?

Hi Shannon:). YES, I think it thaws well enough for a stir fry. It just isn't quite as crispy as fresh cabbage. What a great idea. Good luck with your freezing and preserving:).

Great posts! I just pulled in a bunk of peppers and was wondering what to do with them. And, I love the idea of freezing the cabbage too! Definitely will plant more cabbage this year. :)
Shannon,it definitely works for stir fry... my mother did it when I was growing up... and when I told her how much I had to do something with that is what she suggested!:)
Julia, are you advising to blanch the cabbage twice, or do you mean that the cabbage should be blanched once (for a time determined by whether it's a wedge or in shreds when you blanch it)? Thanks for the information on how to make it easy to keep cabbage on hand.

You just blanch once. So, wedges should be blanched for 3 minutes and if you shred the cabbage, blanch it for 1 1/2 minutes. Sorry if it was confusing...I will go back and fix my wording:). Good luck with your preserving!
